Since Steve still has RSI I cook all my dinners while we talkand watch you tube every night, and in our house that continually means that taco nights.  Whereas my go-to tacos are al pastor, carnitas, carne adovada, and carne asada, Staph asked to combine things up a touch with one thing a bit a lot of modern and advised Birria tacos.

If you can't find it, you can skip it, but it's still worth a look.

 

-        Adobo pepper spray. These have some delicious tastes that are sweet, salty, and spicy. They are the basis of many Mexican dishes and marinades and they are so good that they can be found anywhere in the world. Usually, there are only 3-4 boxes of taco al pasta.

 

-        Mexico oregano. This type of oregano is always cheaper, fresher and better than spices. Therefore, if you are already on the Mexican route, usually bring a bag of around 99 cents.

1-Soak black pepper. Put water in the Sherpa and let it boil, then turn off the heat and add the dry red chili and go to the next step.

2-Season the meat. While you wait for the peppers to soak, cut the roast beef into cubes and season with salt and pepper.

3-Make the topping put all the ingredients except the cloves, bay leaf and cinnamon in a blender. Remove the peppers from the hot water and allow cooling well before processing. Hold the top over the top of the sink and cut off the top with scissors. The seeds fall off quickly. Then put it in a blender as well. Mix them together to make a smooth paste.

4-Marinate the beef overnight. Two hours will be enough, but more time is better for soup.

5-Make soup. Fried onions. Onions are the basis of all flavors, so make sure they are transparent, golden and very aromatic. Allow cooling then adding the meat, pour over the chicken broth and add some of the remaining spices. That’s all there is to it.

Once the stew is ready, cooking tacos is very easy.

1-Cut the meat. Then fry them as needed. I missed this step, and it was good, but if you are very crispy and like hot meat, you would do it here.

2-Heat the tortillas. This increases flexibility and softness. I'm using a pancake heater, but I just wrap it in a damp paper towel and microwave for 30 seconds.

3-Soak and season. Soak the tortillas in the soup to keep the fat close to the surface so it doesn't get too wet, but make sure it's covered. Next, decorate half of the tortillas with beef, onions, coriander (option) and cheese (optional).

4-Fold and fry. Heat the tacos in a non-stick frying pan over medium heat and fry for 2-3 minutes on each side until crispy. Please add goulash as a sauce.

 

What to serve with Birria Tacos?

 

These tortillas are enough for one person. If you want a side dish, you can pair it with homemade nachos, Mexican rice, and prepare all the ingredients needed to make tortilla soup. Or my current favorite: Birria Raman.
